Ingredients

Number of serving: 4
800 g Beef Brisket or Beef Ribs, cubed

3 tablespoons Curry Powder

2 cups Coconut Cream

3 medium potatoes, quartered

1 red capsicum, diced

2 cups beef stock


4 cloves garlic, minced

1 large red onion minces

fish sauce

oil

Preparation

  • In a pot heat oil in a high flame and brown beef on all sides.
  • Add garlic and onion, saute for 1 minute.
  • Add 2 cups of beef stock, bring to a boil and simmer for 45 minutes.
  • Go back to the simmering beef and add the coconut cream and potatoes, bring to a boil and simmer for 30 minutes.
  • Add the capsicum and simmer for additional 15 minutes.
  • Season with freshly ground pepper and fish sauce.
