- In a pot heat oil in a high flame and brown beef on all sides.
- Add garlic and onion, saute for 1 minute.
- Add 2 cups of beef stock, bring to a boil and simmer for 45 minutes.
- Go back to the simmering beef and add the coconut cream and potatoes, bring to a boil and simmer for 30 minutes.
- Add the capsicum and simmer for additional 15 minutes.
- Season with freshly ground pepper and fish sauce.
