Kidneys in sesame oil , ginger & chinese wine

Ingredients

• 2 pairs of kidneys
• 1 piece of thumb sized old ginger
• 3 tbsp of sesame oil
• 2 tbsp of oyster sauce
• 1 tsp of corn flour
• 2 tbsp of chinese cooking wine
• 1/4 tsp of sugar
• white pepper
• a sprig of coriander leaves for garnishing
• 1/4 up water

Preparation

• Marinate the pieces of kidneys with oyster sauce, sugar , corn flour and pepper for 1/2 hour.
• Heat up a wok with sesame oil . Add in the ginger strips and saute till fragrant.
• Add in the marinated kidneys and stir fry for 5 minutes, add in the water and slowly braised till cooked.
• Add in the wine and coriander leaves and dish up. Serve with a bowl of hot rice.
