Cut thicker or thinner strips of zucchini with a mandolin.
Place in a bowl and add salt. Distribute salt evenly and chill for at least 15 minutes. Press zucchini to remove excess water.
Spread pesto sauce over shortcrust pastry, leaving a border.
Top the pesto with slices of zucchini.
Fold the edges of the pastry over the filling. Brush edges with beaten egg.
Bake in a preheated oven at 350°F/180°C for 30 minutes. Brown the pine nuts for a few minutes in a frying pan.
Add the mozzarella (or burrata) and toasted pine nuts to the tart. Drizzle with olive oil and season with salt and pepper.
Garnish with fresh basil leaves.
