Preparation
In a kneader, knead the flour and the salt.
Mix together the fresh yeast with the warm milk and the warm water. Add this mix to the flour and salt and knead during 1 minute.
Add the egg while kneading then cover with a kitchen towel and leave to rest 30 minutes.
Add the egg yolks, the brown sugar and the soft butter gradually. Knead 5 minutes. Cover with plastic foil and leave to rest 2 hours.
Incorporate the chocolate chips into the dough.
Pour the dough in a buttered panettone mold and leave to rest 1 hour. Make a cross on top and brush the top with melted butter.
Put it in the oven at 350F during 40 minutes.
Leave to cool. Melt the chocolate and the butter then coat the top of the panettone. Sprinkle with chocolate chips.
