There is a precise moment when I realize that spring has really arrived: when at the market I stop looking at vegetables out of "duty" and start buying them out of sheer enthusiasm. Tender zucchini, fragrant strawberries, sweet peas-everything seems more alive. And it's not just a feeling: the colors on the plate really affect our mood.

Over the years I've learned a simple but very powerful thing: the more colorful the plate, the more energetic I feel. It's not magic, it's nutrition with a dash of psychology. That's why in spring I completely change my approach in the kitchen, choosing less heavy comfort food and focusing on fresh, quick and full of life dishes.


Why colorful dishes really improve the mood

Eating “in color” isn’t just an Instagram trend, it actually makes sense nutritionally. Each color brings something different to the table:

  • Green: chlorophyll, magnesium → helps reduce stress
  • Red: lycopene → supports the immune system
  • Orange: beta-carotene → boosts energy and promotes healthy skin
  • Purple/blue: anthocyanins → support cell protection

But there’s another layer to it: your mindset. A visually appealing plate creates a positive emotional response even before the first bite. In other words, you start feeling better the moment you sit down to eat. And yes, it works, even on the tough days. Especially then.
