Wash and cut the apricots in half. Remove the pits. Chop the pistachios.
Mix together the eggs, agave syrup, and vanilla extract. Sift the cornstarch and add it in several batches. Mix well until the mixture is smooth.
Add the fromage blanc in several batches and mix well. The texture should be very smooth.
Line the pan with parchment paper and pour in the batter.
Place the apricots on the pastry, rounded side up. Sprinkle with chopped pistachios.
Bake in an oven preheated to 350°F/180°C for 35 to 40 minutes.
The cheesecake will continue to bake after being removed from the oven, so it should remain creamy in the center.
Place the cheesecake (which has been left to cool to room temperature) in the refrigerator for at least 3 hours.
