Wash and cut potatoes into 4 (or 6, depending on size). Transfer to a large salad bowl, add salt, pepper, garlic, rosemary and olive oil and mix well.
Pour into the air fryer tray and program for 20 minutes at 375°F/190°C in Air Fry mode.
Beat the eggs and pour onto a plate, prepare another plate with flour and a final plate with breadcrumbs.
Coat the goat's cheese log with flour, then cover entirely with beaten egg, then breadcrumbs.
Re-dip in the beaten egg and then in the breadcrumbs for an ultra-crisp result.
Place the breadcrumb-covered log on parchment paper in the air fryer tray, spray with oil (optional) and bake for 18 minutes at 375°F/190°C in air fry mode. Turn over halfway through cooking.
Trim the top of the log, garnish with honey and rosemary (you can also add crushed walnuts for a crunchy touch) and serve with potatoes (or toast).
