Baked lemon chicken
This is a very simple recipe to make, quick and convenient for family meals. It takes no time to prepare and cooks itself in the oven without dirtying the kitchen. In a bowl, mix melted butter, lemon juice, 2 chopped garlic cloves, parsley, and thyme.
In a baking dish, pour the previous mixture and spread it over the base. Place the 4 chicken breasts on top.
Season with salt and pepper. Add a few sprigs of thyme and drizzle olive oil over the chicken breasts.
Gently crush the 4 whole garlic cloves with the blade of a knife (without crushing them completely). Add them to the dish along with the lemon slices (to taste).
Bake for 20 minutes at 390°F (200°C) (with fan).
Sprinkle some more chopped parsley on top and serve with basmati rice. A delight! :)
