Looking for a change from the classic fried egg? This sweet-and-savory version is simple yet surprising. The eggs are gently cooked in a base of honey and spiced oil, then the mozzarella melts gently to coat the whole... When tasted, everything blends together: the slight spiciness, the sweetness of the honey and the melt-in-the-mouth texture of the cheese. The green onions and sesame seeds add a fresh, slightly crunchy touch ;) This recipe is perfect for breakfast or brunch when you're in the mood for a change from classic scrambled eggs!

Pour the chili oil into the hot pan over low-medium heat. Add honey and spread over entire surface.
Top with mozzarella. Allow to melt slightly, then add the eggs.
Cover for 5 minutes (watch for eggs to cook more quickly, depending on power setting).
Add chopped green onions (or chives).
When the eggs are cooked, fold in half and serve.
Add sesame seeds, a little extra green onion and voilà! It's ready :-)
