How can I personalize this fried egg recipe?

You can add vegetables such as spinach or tomatoes, or replace the mozzarella with another cheese to suit your tastes.
It's best to prepare it fresh.
You can use chili-flavored olive oil or any other chili-infused oil, depending on your level of tolerance to spiciness. For this recipe, I recommend "Lao Gan Ma Chili" sauce, which goes perfectly with this recipe. You'll find it in Asian grocery stores.
Eggs should be cooked until the white is firm but the yolk is still slightly runny. I achieved this result in 5 minutes of cooking, but I had set the heat to low/medium, so you may need to keep an eye on them!
