Rinse rice under water, drain and keep aside. When ghee is heated, fry the cashew nuts until crispy and brown in color. Remove and keep aside. Do the same to the cashew nuts. Into the same heated ghee and wok, add spices and continue to stir for another 2 mins. Put in the rice and stir a couple of times.. Remove and add into the rice cooker. Pour the water in and wait for the rice to be cooked. Once cool, stir in in the fried shallots, cashew nuts and coriander leaves before serving.
