Prawns in chilli oyster sauce

This prawn dish is best eaten within minutes of cooking and certainly with a plate of steamed white rice.

Ingredients

Number of serving: 8
400g medium size prawns - remove head, shell and de-veined but leave the tail on

5 shallots - sliced thinly

4 garlic - sliced thinly

1/2 inch ginger - sliced into thin stripes

3 red chillies - sliced thinly

2 tbsp oyster sauce

1 tbsp dark sauce

2 tbsp water

1 tsp sugar

1/2 tbsp lime juice

4 tbsp oil

salt to taste (use sparingly)

coriander leaves for garnishing

Preparation

  • When oil is heated, fry shallots, garlic, ginger and chillies for about 3-4 mins.
    Add prawns and all of the rest of the ingredients.
    Stir as and when needed until prawns are cook.
    Scoop out, place on a serving plate and garnish with coriander leaves.
