Ingredients

1 cup all-purpose flour
1 cup grated Parmesan cheese
1 tsp rosemary (or other herb of your choice)
Salt to taste
Black pepper to taste
1 egg
4,5 tbsp melted butter

In a bowl, combine the dry ingredients: flour + Parmesan + rosemary + salt + pepper.

Now add the egg and melted butter.
Mix ingredients and knead to a dough.
Divide dough in two. Shape each piece into a ball. Refrigerate for 30 minutes.
Preheat oven to 350°F/180°C.
Remove the dough from the fridge and cut into thin slices.
Place on a baking sheet lined with baking paper.
If you like, you can sprinkle a little grated Parmesan over the top, as well as rosemary.
Bake for 10 - 15 minutes at 350°F/180°C (until golden brown).
Once baked, remove from oven and cool to room temperature.
Once cooled, serve or store in an airtight tin.

Observations

Shapes: you can use cookie cutters to shape the cookies. To do this, instead of dividing the dough into 2 parts and forming balls, roll out the dough on your work surface and use the cookie cutters to shape the shortbread. All that's left to do is place them on the baking sheet and then in the oven.
