- Rinse bitter gourd and remove skin. Use a spoon to scrap out the insides of the melon. Slice thinly and marinate with pinch of salt for about 15 minutes.
- Remove skin from sausage (optional), and dice. Set aside.
- Heat oil and fry the melon till cooked, and add sausage. Stir fry till fragrant.
- Stir in eggs and add soy sauce. Scramble well. Timing depends when how runny you want your eggs to be.
