Ingredients

Number of serving: 3

¼ Bitter gourd aka bitter melon

½ Chinese sausage

2 tsp Olive oil

Pinch of Salt

Dash of light Soy sauce

Preparation

  • Step 1 - Bitter Melon Scrambled Eggs with Chinese Sausage ( 苦瓜腊肠炒蛋 )
    Rinse bitter gourd and remove skin. Use a spoon to scrap out the insides of the melon. Slice thinly and marinate with pinch of salt for about 15 minutes.
  • Remove skin from sausage (optional), and dice. Set aside.
  • Heat oil and fry the melon till cooked, and add sausage. Stir fry till fragrant.
  • Step 4 - Bitter Melon Scrambled Eggs with Chinese Sausage ( 苦瓜腊肠炒蛋 )
    Stir in eggs and add soy sauce. Scramble well. Timing depends when how runny you want your eggs to be.
