Ervilhas guisadas, versão vegetariana - portuguese pea stew , vegetarian version
Preparation
- In a bit pot add olive oil and golden the chopped onions and minced garlic.
- Add all the meatless products and stir for about 5 minutes.
- Add the vegetable stock then the peas and bay leaves.
- Bring heat to low once it starts boiling and let it simmer for about 20 minutes.
- Bring the heat back to medium and add the eggs, cracking one at the time so to pouch them in the stew.
- Serve just as is or over some rice.
