Korean style beef pockets: oven baked quesadillas with spicy meat and mozzarella

Looking for a change from classic quesadillas? This oven-baked version is both practical and ultra-gourmet! The tortillas are filled with spicy beef (soy sauce, garlic, gochujang...) then folded into triangles before being gratinated with mozzarella cheese. When cooked, the cheese melts and the tortillas become slightly crispy around the edges and soft inside. The sweet-salty-spicy mix works perfectly, adding plenty of character without complicating the recipe. Serve piping hot, with a few green onions, sesame seeds and a dash of chilli oil to spice things up. Perfect for a meal to share, a quick dinner or even as an aperitif! :)

Pour the sesame oil into a frying pan over medium heat. Add the minced meat, breaking it up with a spatula to distribute it evenly.
Add soy sauce, brown sugar, crushed garlic clove and gochujang (optional). Fry until meat is cooked through.
Soak tortillas in water and cut in half.
Top the center of the tortilla with 2-3 tablespoons of the mixture. Add about 2 teaspoons of grated mozzarella.
Fold the sides of the tortilla piece over to form a triangle, then arrange all the triangles in a round ovenproof dish. Top with a little grated mozzarella.
Bake in a preheated oven at 350°F/180°C for 20 to 25 minutes.
Add hot oil, chopped green onion and sesame seeds, and you're ready to go!

What can I use instead of ground beef?
You can use chicken, pork or even vegetable ground beef!
Can I change the seasoning?
Of course, don't hesitate to change the spices. For a Mexican version, use: 1 tbsp olive oil, juice of 1 lime, 1 tsp cayenne pepper, 1 tsp smoked paprika, 1 tsp ground cumin, 1 tsp oregano, 1 tbsp onion powder, 1 tbsp garlic powder, 1/2 tsp salt, 1/2 tsp pepper. You can also add onions and peppers to the preparation if you wish. For the topping, coriander is perfect!
What can I use instead of gochujang in this recipe?
You can replace it with sriracha (spicy version) or tomato paste (non-spicy version).
Which hot oil should I use?
I recommend "Lao Gan Ma Chili" sauce, which goes perfectly with this recipe. You'll find it in Asian grocery stores.
