Lavash kebab with tortillas, the famous easy oven-baked kebabs!
A kebab-style mille-feuille? That's exactly what this recipe for homemade lavash kebab is all about, with tortillas and fragrant minced meat. There's no need for a rotisserie or grill here: the skewers are assembled layer by layer, then baked in the oven for a super-melting, flavorful result, with a nice dose of spices and fresh herbs. It's simple to prepare, impressive to cut, and the perfect change from traditional keftas or burgers. Serve with a salad or a lemony yoghurt sauce;)
Ingredients
Materials
- large skewer picks (12 inches)
- cleaver
- knife
- chopping board
- parchment paper
Preparation
Cut the edges of the stacked tortillas to form a square.
Wash bell pepper. Cut onion and bell pepper into large chunks. Remove leaves from parsley.
Place in chopper with garlic, salt, pepper and paprika.
Blend coarsely (but not too much, we don't want it to be liquid!).
Transfer to a bowl and add the minced meat. Mix by hand.
Spread filling over the entire surface of a tortilla, making a thin, even layer. Cover with another tortilla and repeat.
- You can form balls of filling of the same size if you want to be as even as possible.Finish with an unfilled tortilla to close the "mille-feuille". Cut into 3 equal strips.
Turn the three "mille-feuilles" strips over so that you can see the different layers.
Cut in half.
Place the right side on top of the left side. Stick skewer picks into it.
Cut through the center to form two large skewers.
If it's too long, you can form a third skewer with the excess!
Place on a baking tray lined with greaseproof paper and bake in a preheated oven at 390°F/200°C for 20 minutes, turning over halfway through.
And it's ready! Serve with a yoghurt sauce (here Greek yoghurt, lemon, salt, pepper and chopped parsley) and enjoy!
Observations
Can I replace ground beef with another meat or vegetarian option?
Yes, you can replace the beef with ground chicken, lamb or even a plant-based ground for a meatless version.
Why is it advisable to coarsely blend the vegetables and herbs for the stuffing?
Coarse blending allows you to keep the chunks for a pleasant texture and prevents the stuffing from becoming too liquid, which would make it easier to shape the skewers.
How do I get even, well-formed skewers with this recipe?
For even skewers, spread a thin, even layer of filling on each tortilla, then form equal-sized balls of filling before assembling and cutting.
What sauce best accompanies these lavash kebabs to enhance their flavor?
A lemony Greek yoghurt sauce with chopped parsley, salt and pepper is ideal to bring freshness and balance to the spicy paprika flavors in the kebabs.
How to serve lavash kebab?
Serve with a tomato or cucumber salad, for example!
Is there any other way to cook lavash kebab?
You can cook lavash kebab in the airfryer (4 min per side), but also on the barbecue.
Can I make smaller kebabs?
Of course, you can make smaller kebabs with medium-sized wooden skewers (6 inches). In our recipe, a large skewer (12 inches) corresponds to 2 parts/2 small skewers.
