Baked potatoes with chimichurri

Preparation
For the baked potatoes:
Wash and cut the potatoes into quarters.In a large bowl, mix the potatoes with the olive oil, salt, pepper and garlic powder. Make sure the potatoes are well coated with the mixture.
Place the potatoes on a baking sheet lined with parchment paper. Bake for about 30-40 minutes at 350°F/180°C, or until golden brown and crispy on the outside and tender on the inside.
*Check and turn them halfway through baking so they brown evenly.While the potatoes are baking, prepare the chimichurri.
In a small bowl, mix the chopped parsley, minced garlic, dried oregano and finely chopped cayenne bell pepper.Add the wine vinegar and olive oil and mix well.
Season with salt, pepper and paprika. Mix again.Let the chimichurri sauce rest for about 30 minutes to allow all the flavors to integrate.
*You can also prepare the sauce the day before and keep it in the refrigerator. The flavors will be even more integrated.Once the potatoes are ready, take them out of the oven and let them rest for a few minutes. Now, just serve the potatoes with the chimichurri sauce. You can pour the chimichurri sauce over the potatoes or serve it separately so that everyone can adjust the amount to their taste. Enjoy!
Observations
Should I cook the potatoes in their skins?
It is not necessary, but if you decide to do so, be sure to wash them well. The skin will give them a more intense flavor. In our case, we baked them with the skin on.
