4 egg whites
2 cups sugar
2 Tbsp almond extract
3.5 cups almond meal

Preheat oven to 390°F (200°C).
Beat the egg whites until stiff, then add the sugar gradually. The whites should be compact and bright.
Add the almond extract and add the almond powder with a spatula.
Use a piping bag or 2 tablespoons to form the amaretti on a baking sheet covered with parchment paper.
Cook for 7 minutes at 390°F (200°C). At the end of the time, remove from the oven immediately so that they do not dry.
