Ingredients

1.75 lbs sweet potatoes
1/3 cup butter
1/2 cup sugar
1 tsp cinnamon
salt
1 Tbsp cornstarch
2 oz grated coconut
3 eggs

Cook time1 hour

Peel and dice the sweet potatoes. Cook for 15 minutes in boiling water.
Mash the sweet potatoes and add butter.
Add sugar, cinnamon, a pinch of salt and combine. Add corn stach and mix well until combined.
Add grated coconut, then the eggs and mix well.
Pour the batter in a greased mold and bake for 45 minutes at 350°F (180°C).
There you are, your sweet potato cake is ready !

I made this exactly as the recipe directed. A half cup of sugar was too much. Not worth adjusting the ingredients to try again. It went into the trash.
