Prepare the filling:
Drain the tuna, then crumble it and mix it with the diced tomato and chopped onion. Season with salt and pepper.
Cut the filo pastry sheets in half. Fold the halves in two and place a tablespoon of filling at the edge of the sheet. Fold to form a triangle.
Fold the triangle over the sheet and brush the remaining part with beaten egg. Fold the tip of the sheet and press well to seal the samosa.
Place the samosas on a baking sheet lined with parchment paper and brush olive oil on each side. Bake for 10 minutes at 200°C (390°F).
