Korea is not only setting trends with K-Pop or the dramas we see on platforms: it is also doing so at the table. Mango bingsu is a Korean dessert reminiscent of a slushie, made with finely shaved ice, fresh mango and condensed milk. It is often served with ice cream and has become one of the most sought-after Korean recipes outside Asia. In Korea it has been a summer tradition for decades, and today its modern versions fill the menus of coffee shops, where it is prepared with cheesecake, tiramisu or cookies. You also can find it in Japan named Kakigori, served with a tea topping. The good news: you can make it at home without the need for a special machine.

    Mash the pulp of 1 mango with the sugar, lemon juice and a little water to a fine puree.

    Take the milk base out of the freezer and scrape it with a grater or fork into very fine flakes. You can also crush it with a rolling pin inside the bag to break it into slush. If you have a shaved ice machine, even better.

    Place the ice in a cold bowl (we recommend putting it in the freezer at least 1 hour before), add the diced mango, a scoop of vanilla ice cream (optional), pour the mango coulis on top and finish with sliced almonds.
