Beef Vegetable Soup
Preparation

Cut beef into bite sized pieces. Put in a large pot and cover with water.

Add onion and celery, parsley and bay leaves. Salt and pepper to taste.

Bring water to a boil, lower heat and simmer for 1 hour.

Add cocktail vegetable juice and continue to simmer until meat is tender.

Add veggies and potatoes. Cook for 30 more minutes and serve.
