2 libras lean stew meat

3 stalks of celery

1 tablespoon chopped parsley

1-2 bay leaves

salt and pepper to taste

1 can of cocktail vegetable juice

1 package of frozen vegetables


  • Cut beef into bite sized pieces. Put in a large pot and cover with water.
  • Add onion and celery, parsley and bay leaves. Salt and pepper to taste.
  • Bring water to a boil, lower heat and simmer for 1 hour.
  • Add cocktail vegetable juice and continue to simmer until meat is tender.
  • Add veggies and potatoes. Cook for 30 more minutes and serve.
