Here, they are combined with melting salmon, tender zucchini and a handful of arugula for a touch of freshness. Lemon adds a tangy note that balances everything out perfectly. Orzo pasta:
Cook the pasta in a large volume of boiling salted water for the time indicated on the packet.
Drain and run under cold water to cool faster.
Salmon: *you can add a little olive oil, salt and pepper before cooking.
-Airfryer: 10-12 minutes at 370°F/190°C.
-Oven: 12 minutes at 350°F/180°C.
Zucchini:
Cut zucchini into small cubes.
*Add a little salt and pepper before cooking.
-Oven: 20 minutes at 390°F/200°C.
-Airfryer: 15 minutes at 350°F/180°C.
Pan-fry: cook zucchini for a few minutes in a drizzle of olive oil.
Add a small glass of water and cook until completely absorbed.
Pine nuts:
Fry the pine nuts in a hot pan over medium heat, dry, until golden.
Assembly:
Pour drained orzo pasta, flaked salmon steak and cooked zucchini into a salad bowl or serving dish.
Add arugula, olive oil, lemon juice and zest, salt and pepper and toasted pine nuts.
Mix well and serve. Now it's ready!
