Prepare homemade tortillas or use store-bought ones.
Prepare the lentil salad: Pour the lentils into the cold water, bring to a boil, then cover and cook for 25 minutes. Drain and let cool.
Mix the lentils with the quartered cherry tomatoes and chopped red onion. You can add the crumbled feta directly into the salad or keep it separate. Season with salt and pepper.
Cut the avocado in half and then into slices. Quarter the limes. Finely chop the cilantro. Place each ingredient into separate bowls.
Prepare the Mexican salsa: mix all the ingredients cut into small pieces. Add the lime juice, a dash of olive oil, and season with salt and pepper.
You can now create your tacos by adding as much or as little of each ingredient into your tortilla as you like.
