  • Vegetarian lentil tacos - Preparation step 1Prepare homemade tortillas or use store-bought ones.
  • Vegetarian lentil tacos - Preparation step 2Prepare the lentil salad: Pour the lentils into the cold water, bring to a boil, then cover and cook for 25 minutes. Drain and let cool.
  • Vegetarian lentil tacos - Preparation step 3Mix the lentils with the quartered cherry tomatoes and chopped red onion. You can add the crumbled feta directly into the salad or keep it separate. Season with salt and pepper.
  • Vegetarian lentil tacos - Preparation step 4Cut the avocado in half and then into slices. Quarter the limes. Finely chop the cilantro. Place each ingredient into separate bowls.
