Cut the sweet potatoes in half and pour some lemon juice to prevent oxidation. Score the flesh.
Combine olive oil, salt, pepper, herbs de Provence, and chili powder. Brush the flesh of the sweet potatoes with this mixture.
Place the sweet potatoes on a baking tray lined with parchment paper and bake for 40 to 50 minutes (depending on the size of your sweet potatoes) in a preheated oven at 350°F (180°C).
Meanwhile, prepare the Skyr sauce:
Combine Skyr, salt, pepper, chopped chives, lemon juice, and olive oil.
Check the doneness of the sweet potatoes: the flesh should be very tender. There you go, your side dish is ready!
