Easy, moist pear and almond cake
This pear cake is easy to make and especially moist thanks to the almond flour. Some of the pears are mixed into the batter in chunks, while the rest are arranged in thin slices on top. A few slivered almonds add a slightly crunchy texture after baking. A fruity, indulgent cake, perfect for dessert or an afternoon snack.

Preheat the oven to 350 °F/180 °C. In a mixing bowl, whisk the eggs with the sugar until the mixture is smooth.
Add the flour, baking powder, vanilla, melted butter, and milk. Mix until the batter is smooth.
Stir in the almond flour and mix again.
Peel the pears. Cut about half of them into small cubes and gently fold them into the batter.
Pour the mixture into a buttered or parchment-lined baking pan.
Cut the remaining pears into thin slices and arrange them on top of the cake.
Sprinkle with slivered almonds if you like.
Bake for 40 minutes at 350 °F/180 °C. Check for doneness with the tip of a knife, then let cool slightly before removing from the pan.

Which pears should you choose?
Choose pears that are ripe but still slightly firm. Overripe pears may release too much liquid during baking.
Can you substitute for almond flour?
Yes. Hazelnut flour works very well and will give the cake a more pronounced flavor. Shredded coconut can also be used, but it will alter the cake’s texture more significantly.
What kind of pan should I use?
A 20-cm square pan works very well. You can also use a round pan about 8 inches/20 cm in diameter.
How should I store the pear cake?
Store it tightly wrapped for 1 to 2 days at room temperature, or up to 3 to 4 days in the refrigerator. Be sure to take it out of the refrigerator a little while before serving so it regains a softer texture.
Can the cake be frozen?
Yes. Let it cool completely, then freeze it whole or in individual slices, well wrapped.
Can I use other fruits?
Yes. Apples work particularly well. You can also add a few berries, keeping in mind that they may release more juice during baking.
