Observations
Which spices to use for original homemade chips?
Homemade onion and Parmesan chips lend themselves to a whole host of spices. In addition to paprika and herbes de Provence, you can add :
- Sweet chilli or Cayenne pepper to spice things up,
- Curry powder for an exotic touch,
- Or fresh rosemary for a Mediterranean flavour.
These spices will personalize your recipe and make for original, tasty aperitif chips!
Can I use a cheese other than Parmesan for homemade chips?
Yes, if you want to vary the flavors, you can replace grated parmesan with grana padano, pecorino or even grated comté for sweeter or stronger flavors. Parmesan remains ideal for crispy chips, however, thanks to its high dry matter content.
Do I need to precook the onion to make homemade chips?
No, in this easy homemade chip recipe, the onion is used raw, very thinly sliced. Baking it in the oven is enough to dehydrate it and give it a crisp texture. So there's no need to precook: this also guarantees quicker homemade chips!
How to cut onions for homemade chips?
For crisp, even chips, use a mandolin or a good, sharp knife. Onion slices need to be very thin to ensure even cooking and light caramelization of the onion with the Parmesan.
Can I prepare homemade chips in advance?
Yes, you can prepare your homemade aperitif chips a few hours in advance. Leave them to cool well and store them in an airtight jar or metal tin to preserve their crispness until ready to eat. They're perfect for an aperitif with friends or a snack in front of a good movie!
How to keep homemade chips crisp?
To keep your homemade chips crunchy, store them at room temperature in an airtight container or metal tin. Avoid plastic tins, which retain moisture. Ideally, you should eat them within 48 hours to fully enjoy their texture.
