This tortilla is perfect for using up your leftover raclette. Keep your potatoes, leftover cheese slices, and charcuterie, and just add eggs! A super easy recipe to cut into small pieces for appetizers or enjoy as a dish accompanied by a good mixed salad :-)

Whisk the eggs in a bowl.
Add the cooked potatoes. Mix again. (To cook raw potatoes quickly: cut them, add a bit of butter, cover, then microwave for 8 minutes.)
Cut the slices of charcuterie and raclette cheese into small pieces, then mix them with the batter. Season to taste.
Pour the batter into a greased mold. Bake at 190°C (370°F) for 25 minutes. Check for doneness.
And there you have it, your raclette tortilla is ready!
Observations
Depending on what you have left, you can add more (or less) cheese and more (or less) charcuterie.
